apps won't update

I have a 2015 Macbook Pro that I recently cleared for a new users. The Safari and Mail apps don't meet security standards for mail. I can't find a way to update those apps to newer versions. Help please?

you do that with macOS updates. That computer can handle all the way to Big Sur, that would be update enough.
