how do I use the cable that has the USB-C and lightning ends to charge my new iPhone 12 pro?

You will need to get an 18- or 20W USB-C power adapter. Like the following:

Alternatively, you can also use MagSafe chargers with the iPhone 12 models.

Which model is your MacBook Air.?Those built in 2017 or earlier use standard USB-A ports ... and why the USB-C end of the cable won't work. You would need to get a USB-C (female)-to-USB-A (male) adapter.

Is this the ONLY use for the USB-C end of cable? Can't seem to plug into my MacBook Air or any other accessory with it.

By "Can't seem to plug into" do you mean that it won't physically fit or that you are not able to charge your iPhone via that connection? ... or both?
