I upgraded my 2019 iMac to Big Sur and my battery icon is gone. I've checked the Dock & Menu Bar but the battery option just is not there. Weird because I also upgraded my 2015 MacBook Pro and I don't have the same issue with it. Where is the icon?

SandsofArrakis is right, iMacs don't have batteries so don't have the battery preference pane so don't have the battery icon in the menu bar.
Where is my battery icon in Big Sur?
