email SMTP server list

The edit email SMTP server list pull down menu is empty so no email can be sent

iMac 21.5″, macOS 10.15

When I do it sends fine. But when I edit my SMTP server list, I delete the bad ones and a few days later they come back. Any ideas? This is how I want it to look:

Try this...

Mail Preferences>Accounts>Account Information>Outgoing Mail Server (SMTP):click on that & choose Edit Server List, add sever.
