How do I get rid of the crescent moon that's showing up on my texts to some of my contacts on an iPhone 8?

It means you have do not disturb on for those particular contacts. If you don't want that:

Swipe left on the conversation in Messages.
Tap Show Alerts.

Now you'll receive notifications from your contact again!
