Is there a way to not have a default payment setting but be prompted to choose a payment on each transaction? I want to be able to purchase between accounts so I don't make business purchases with personal funds and vice versa.

Not really.
You would have to re-arrange the payment methods between transactions.
Am I able to choose which payment method is used per each transaction?
