Apple watch series 3
I have FIDO as a carrier on my phone, will I still be able to receive text messages and phone calls through my apple watch series 3 (GPS only) if it's close to my phone?

The GPS models only care about your iPhone. They do not care about your iPhone’s cellular carrier.
As long as your iPhone is nearby, your GPS Apple Watch can do Everything the cellular model can do.
