It is generally possible to specify in store pickup. Not sure if they would give you a precise date when you order, but they would keep you updated and definitely notify you when it was ready.
And with an in store pickup, you can get them to help you setup and pair your Apple Watch to your iPhone (a useful service if this is your first Apple Watch).
