My iMac (27 inch, Late 2014 - running Mojave 10.14.5) has been waking up from sleep at all hours, randomly. I stopped automatic software updates, thinking this might be why. Any ideas?

In addition to "wake for network access" it is also a good idea to make sure that "Automatically restart after a power failure" is unchecked, so that the iMac will not startup after a power interruption or loss.
Please check to see if it is set to "wake for network access". This would be Preferences - Energy Saver
