I have recently found out I have allergies to cobalt and gold. How can I know for sure if my 2023 watch SE have these metals?

The SE3 has an aluminum case which should quite effectively shield you from any potential allergens “inside.”
As far as gold … it’s ubiquitous in the manufacture of miniature electronics …
