How do I bypass Apple's parental control restrictions on my purchased hardware?

Can someone tell me the best way to ask apple to stop trying to parent me, I bought the hardware, I should be able to use it the way I want not be told you cannot access parts of it and have no obvious way to tell the company that provided the hardware that they are wrong

From your post it is not clear what you are referring to where additional information would be needed. There are obvious age and region related restrictions that will prevent access to some options and features. For example models intended to be sold in China are restricted from using any form of AI as that is the condition for a device that is manufactured for sale in that region. Whether you are in China or not, that model will not have the ability to use Apple Intelligence.

you think I'm in China? why? (okay re read my response and I was obviously drunk at the time) but if you can see my IP I am now thinking I need to speak to Virgin Media O2 to see why it looks like it's delivering it's services from China. anyway my point is Apple seems to me to want to stop me having access to the whole of my computer, and I don't think this forum is the place for this

We cannot see your IP no more than you can see ours. We are not Apple. We are Apple customers like you and this is a customer to customer support site.

You are not providing us with enough information for us to be able to determine what guidance we can offer. You haven't even told us what hardware you are using.

Apple does have service use restrictions based on location and age. These vary by region.

Could you be referring to this? -->

You simply have not provided enough information, which leaves us guessing what you are talking about. None of us here can see your IP address and have no idea what you are referring to when you say Apple does not want you to use the whole of your computer. Maybe consider providing screenshots as long as they do not reveal any personal information, so we have some kind of idea what you are seeing.
