Seems an Apple Music subscription runs from expiry date one month to expiry date for the next month... so am wondering where you were in the charge cycle.. eg: If you did not cancel at least 24 hours before the expiry date, the next month's charge would automatically go ahead as usual. Also, a cancelled subscription would generally remain active until the expiry date of the current month's subscription. Wondering if the cancellation went through ok? See : How to cancel Apple Music - Apple Support

Cancelling a subscription does not remove a pending charge. That just means you will not be charged again at the renewal time. You cannot cancel a pending charge. After a failure to process the transaction, it will continue to attempt to charge you until it can finally be processed.

You haven't described what prompted the charge.. Maybe you started a free trial and forgot to cancel a day before the trial ended like seen on the Authorization Screen that required a double click of the side button, followed by verification with Face ID/Touch ID or Passcode.
