WhatsApp is asking me to update however the App Store account is linked to my ex-husband’s email address. Is there a way that I can navigate round this without having to ask him for his password which he won’t give me anyway? I don’t want to lose any of my WhatsApp communications.

You really should delete that copy of the app and redownload it using your account. Apps are tied to the accounts used to obtain the app originally. Unfortunately this may result in loss of the messages. I don't use WhatsApp so it depends upon if the data are tied to the Apple account or there is a separate account with WhatsApp and you can sign into that after getting your own copy of the app.
I said "really should" but what that means is this is the only solution unless you continue to use his account which I STRONGLY suggest you do not.
