I just got a new iPhone and I can’t pair it with any Bluetooth devices, like headphones and speakers. It worked fine with my old iPhone.

If your iPhone just won’t connect to your Bluetooth device, don’t worry it happens more often than you’d think. Here are a few quick things you can try that usually fix it:
Basic Stuff to Try First
• Restart everything: Turn both your iPhone and the Bluetooth device off, wait a few seconds, then turn them back on.
• Update your iPhone: Go to Settings > General > Software Update and make sure you’re running the latest iOS. Sometimes even a small update fixes Bluetooth bugs.
• Keep them close: Make sure your iPhone and the Bluetooth device are right next to each other.
• Bluetooth on: Double-check that Bluetooth is actually turned on (Settings > Bluetooth).
• Pairing mode: Try turning your Bluetooth device off and back on, then put it in pairing/discovery mode again — check the device’s manual if you’re not sure how.
If It Still Doesn’t Work
• Toggle Bluetooth: Go to Settings > Bluetooth, switch it off, wait a few seconds, then turn it back on.
• Forget and reconnect: If your iPhone can “see” the device but won’t connect, tap the little “i” icon next to it and choose Forget This Device, then re-pair it.
• Reset network settings: If nothing else works, go to Settings > General > Transfer or Reset iPhone > Reset > Reset Network Settings. Just remember, this wipes saved Wi-Fi passwords and Bluetooth connections, so you’ll need to reconnect afterward.

first time you connect a bluetooth device to a device you will need to put the bluetooth device into pairing / discovery mode how you go about doing so should be described in the documentation of said bluetooth device
also you need to make sure the bluetooth device in question do not have an active connection to another device like my headset like to auto connect to my iphone when turned on, so if I were to say wish to pair it with an ipad or computer then I'd disconnect it from my phone first.
if you are unsure how you place your bluetooth devices into pairing mode and lost the documentation then on the manufactures website or a quick google should give you a link to a guide.

If the bluetooth devices use firmware, the firmware may need updating for compatibility.

If the bluetooth devices come with an app, each app may need updating
Eg: The manual that came with each bluetooth device may have info, on how to update.
The manufacturer's support website may have downloads, or support.
