iPhone 17 max pro apple iTunes

I have a 2021 and got a new iPhone max pro and I'm having syncing issues. I want to custom sync the iPhone like photos and certain playlists but the sync settings on iTunes isn't doing anything I can't click it or change anything, I've updated both phone and the Mac and iTunes, changed connections wires, restarted both iPhone and iMac, I believe its the latest update as was working before, never had a issue like this before. reading work around none have worked,
