I brought my Apple TV box with me to Italy and have it hooked up and running. The problem is that most of the content I want doesn't seem to be available. How do I fix this so I can see shows I want on Apple TV, paramount +, showtime, etc...

Most Apps will be region dependent and can and will change available content based on region. Things like Paramount+ and Showtime are likely to not be available in Italy and would block access to their content if the connection is determined to be made from there.
For Apple TV, content is tied to the country or region for your Apple Account not your physical location so that should not have changed.
The best you could do is get a VPN and change the location to the US.
Or use services that are available in Italy.
