How to delete data and reset macbook pro

Hi... I have two older MacBook Pro's, one of them at

...10.15.7 Catalina

and the second one at

...12.6.2 Monterey

I've used Macs since the beginning but admittedly am not very knowledgeable on how to delete all my data and reset the macOS to some factory reset or whatever it would be called???

Looking for guidance on how best to to reset these computers so I can recycle them at an Apple Store... Want to be sure to delete ALL my data!!! Thanks for any help...

And one other question. I had "File Vault" turned on on both of the above mentioned computers...

In that case just erase the Macs and surrender them to Apple.

Most of the steps in What to do before you sell, give away, trade in, or recycle your Mac - Apple Support are either inapplicable or optional. For example you do not need to create a backup and the steps regarding iTunes do not apply to Catalina or later. The only step you ought to follow is Step 6, which is to erase the Macs.

I saw nothing (might have missed it) in your link about turning File Vault OFF...

That's because if you encrypted those Macs with FileVault there is nothing else you need to do. Just erase them. Do not turn off FV; that would defeat its entire purpose. FileVault renders your data utterly useless to anyone without its encryption password — which also gets erased when you erase the Mac.

Wow... A lot of complicated stuff to do and I'd bet that at least one of the items pointed out in your link would NOT work as simply described... If I made an appointment and took say the oldest of the two to the Genius Bar would they, for a price, reset the Mac for me???

And one other question. I had "File Vault" turned on on both of the above mentioned computers... I saw nothing (might have missed it) in your link about turning File Vault OFF... I would likely do so before I did anything else and I have the information required to turn it off but why is that not mentioned in the link you provide??? Or again did I miss it??? thanks..

No, I'm intending to recycle to an apple store... I have thought about removing an destroying the "hard drive" but in both of these Macs, I'm pretty sure the hard drive is an SSD and I'm not sure I would know exactly what is SSD and what is battery (wouldn't choose to mess with Li batteries)... Are these SSD's removable???? And if removed that I would then. just hand in what's left at an Apple Store...
