I am on an iPhone 14 Pro and had a similar issue in South Africa. I contacted my service provider but they couldn't assist. I have a physical SIM that I put in another phone and I could connect to the network again. This lead me to believe the issue was with iOS26 rather than with my service provider. Also, I couldn't see the option to choose my mobile network. This must have been removed in iOS26. What frustration!!
Eventually this video helped me, but my frustration with the situation has not subsided.
