We’ve tried multiple things but nothing is working to take the parental controls off of YouTube for some reason and I just got it.

Parental controls need to be removed by the parent who set them up in the first place.

Are these parental controls in ScreenTime? Or are these controls in the YouTube app itself? Have you tried logging into your YouTube account through a browser?
The browser (safari) also had YouTube locked and when we tried to unlock it, it didn’t work. We can get on the YouTube app but we can’t log in because of the website still being blocked for some reason.

This is something you're going to need to resolve with YouTube/Alphabet.
