usare punti dati di temperatura e orario per creare grafici giornalieri e mensili

I have to create graphs that show the thermal trend of some locations on a daily and monthly basis. In column A (from A2) there are times at intervals of 10 minutes (A2 00:00, A3 00:10 and so on...); instead in column B there are temperature data points (B2 3.5 ̊C, B3 2.8 ̊C and so on...). On the vertical axis there must be the temperature scale while on the horizontal axis the times from midnight to 23:50. Why doesn't what I want happens? Where am I wrong? Why is the graph not generated when I write the temperature numbers in column B?

It isn't clear from your screenshot exactly how your table is setup, but I'll take a guess here...

In your source table, is column A set as a header column (Inspector -> Format -> Table -> Headers and Footers)?

If not, it needs to be.

If there is NO header column then Numbers assumes that all the data are series that you want to plot, so you end up with two lines that look horizontal, at the extreme top and bottom of the chart, because that's how the durations 00:00, 00:10... etc.) would map to the chart.

With the time column A set as a header column, Numbers will use this for the axis, which should give you what (I think) you want.

Here's an example of the two. The first graph is with column A set as a header column, the second without:

I set column A as a header column and also column B, as you shown me in the photo. but it didn't success. The graph doesn't really appear and I don't understand why. Also, I would like the graph to be interactive: that is, when I hover the mouse cursor over the graph, I would like you to give me the value of that precise point. Is it possible?
