I’m trying to pair an Apple Watch to my phone and during pairing process the system ask for an update which is taking about 14 hours. Is this normal?

That’s usually a transient network connection problem, or a transient server problem at Apple. Or the network is Really Slow, or your network connection is being throttled as some 5G plans can be.
You can try restarting the iPhone, as that may speed things.
The watch and the phone should both be on wifi as stated in the small print.
