I've purchased a new iPhone and want to backup my iPhone SE (2016) (15.8.3)to my new iMac (Sequoia 15.6.1) before activating my new phone. Is the SE phone compatible with the iMac I have?

As long as the iPhone operating system (OS) pre-dates the Mac OS it will work (not sure if it would if you had an iPhone 1 though). It wouldn't work if your iPhone had an OS that came out after your Mac OS was released.
I can back up an iPad 5 running iPadOS 16 to my Macbook Pro running Sequoia, so I foresee no issues
