DVD Player used to have a deinterlace video setting, but now that seems to be gone. I know hardly anyone uses DVDs any longer, but some of my clients still want them and it's difficult to proof a DVD when I see interlace lines and am not sure if clients will be seeing them, too.

The current stable release of Sequoia including bug fixes, security updates is macOS 15.6.1

I use VLC and there are several filter options under Video > Deinterlace.
You also say you are doing this for "clients". Why are you sending them interlaced video? If you are producing encoded video, use a tool such as Handbrake that removes interlacing.
