Does it eventually make it to the Desktop? If not, then try booting into Safe Mode.
Otherwise, if you can finally reach the Desktop, then run the third party app EtreCheck and post the complete report here so we can examine it for possible clues.

What make and mode is that hub..?
What external drives are connected to the hub...?
Is that hub plugged into the Mac mini or into the back of the Display...?
External drives with macOS installed on them can hamper the startup time.
Starting up from an external drive can be slower than starting up from the internal drive.
Some solutions include:
1) Disconnect the external drives one at a time and testing.
2) Leaving the Mac mini on and only allowing the Display to turn Off.

PS have been running the M4 Mac Mini since Oct 28, 2024 ant it runs just as fast today as back in 2024
