My AW Series 10 keeps resetting the notification sound to max volume. I normally keep it one click above silent, but then it randomly sets itself to max. Going to Settings > Sounds & Haptics allows me to drop the volume back down, but inevitably it will turn itself back up. I don't want to put the watch on Silent Mode, but this is getting silly.

Did you already try to force restart the watch by pressing the Digital Crown and the Side button together for at least 10 sec, until the Apple logo comes back again?
If this does not work, erasing the watch and setting it up again as a new device would be the next step:

If the notifications loudness does not increase after that anymore, restore from the latest backup.
In case the issue comes back, the backup data is corrupted and can’t be used anymore after erasing and pairing it again.
