When browsing Apple Music Classical, sorting by popularity does not seem to be accurate based on the number of recordings. This hasn’t always been the case, anyone else experiencing this?

Hmm, hadn't noticed that, but most likely Apple tweaked their definition of "popularity" to be something other than just number of recordings. They generally don't disclose details of decisions like that, since there are always players looking to game the system.
