I woke up during the night gasping for air and my respiratory data shows a grey gap in the cyclinder at that time, but no respiratory disturbances recorded. Does this cylinder prove this? I purchased the watch in order to use this data to share with my doctor.

Receive sleep apnea notifications on Apple Watch - Apple Support describes how to track breathing disturbances while you are sleeping. It takes a few days for it to collect sufficient data for that purpose, and no, that is not what its respiratory rate data are intended to reveal. It just wasn't taking measurements during that time.
