Notes text randomly turning dark gray or black on Mac running Sequoia 15.3.2

Sequoia 15.3.2 - I am attaching a screenshot from a note I just took last night in a class (2025-07-16). In the middle of typing it, my paragraph turned from white type to dark gray, unreadable. This is happening across the board in Notes for me. I'll go to a note and half of it is black instead of white. The only way I can fix it is to select it, and pick BLACK, then it turns to white. Please Apple, fix this... there is no listing of this issue being fixed in any current update.
