I set siri’s voice American (2) but then when I used it irl, I wanted to change it. i’m willing to set it up and try irl to see which I like best. But now I don’t see other variations that I saw the first time (Australian, Indian, British, etc.). What should I do?

Try resetting your settings. See this for a disclaimer of what will all be reset: Reset iPhone settings to their defaults - Apple Support
To add to the disclaimer, wallpapers might be deleted, along with any Alarms you’ve set, and I believe Focuses will be gone too. (It’s been a while since I did this so I don’t quite remember what all is delete.) Media, Photos, etc. will not be deleted though.
