My Mac is saving automatically my files. How can I change that ? i e I want it to ask "do you want to save?"

What applications? The setting will depend on that.
The operating system has worked this way for 15 years. It isn't going to change.
Autosaving files is an application specific feature.
There is no setting named "autosave". but there is a setting
"Ask to keep changes when closing documents"
So issue resolved
