iPhone keeps changing to Pacific time overnight

It sets to the cellular tower network time based on the location of the tower. If you are near the border it may be picking up the time from a US tower.

Alternatively, try turning off roaming.

Verizon once had (and may still have) its own disparate networks, and roaming between those Verizon networks when near a state boundary also burned through immense battery power, and dropped calls and texts.

Until you get it figured out, turn off the automatic time setting so that you don't miss any more meetings.
