Long story short: Coworker left. I have their MacBook- but it wants me to log in as them. I've tried to erase the memory so I can download a new iOs and start over. Instead it keeps wanting me to log in as them just to even do that. How can I bypass this and get this thing wiped clean? Do I need to go to a Mac store?

You can't do that.
The device is activation locked. If you don't have the credentials used to lock it and you're not using a management system for your devices that can clear that, you will need to take it to Apple along with the original proof of purchase or serialized invoice to have the lock removed.
Activation lock is a very effective anti-theft feature. It renders a device completely useless to anyone other than the legitimate owner.
