Can't update to ios 26 beta knowing that I'm already enrolled in the beta program and it's stuck on 18.5

I turned the 18.5 beta off, restarted the iPhone but nothing has changed.

Knowing that I have iPhone 16 pro max unlocked

Are you a registered developer? If no, look around this forum and notice how many people who aren't developers, managed to find a way to install iOS 26 Beta, to find it's not even close to being ready and they want to go back. Many didn't do what developers know, which is to make an Archive Backup on a computer before installing the beta release. They made a huge mistake jumping into this at the earliest stages, when it is for developers, who know better than to install beta on their primary device.

If you're not a developer be for-warned and maybe wait at a minimum for public testing to begin sometime in July.

If you are on the iOS 18.5 Beta, since there are no other public software releases, you need to go down to public iOS 18.5 then update to Beta iOS 26. To downgrade software is performed by connecting your iPhone to a computer and putting your iPhone into Recovery Mode. Please follow the Support Article below, then the iOS 26 Beta option should show up. If there were a newer public release of iOS, you could update to that from your iPhone software update menu.
