I am using ventura 13.7.5. on my MacBook Air. I realise that I have missed upgrades and am concerned about going straight to the latest one which I think is Sequoia 15.5. How might it affect the programmes that I usually use such as Excel and Word.

You need a 2018 or later MBA for Sonoma or later. If not, Ventura is the latest you can run.
When you bought it really isn't relevant. What's relevant is the model year as displayed in "About this Mac" as noted above.
What does that say?
You need a 2020 or later MacBook Air to install Sequoia. If your Microsoft software is up to date you should be fine.
If you open "About This Mac" from the Apple menu it will tell you what year your Mac is.

My MacBook Air is pre 2020. What update is available to me? Will it affect Word, Excel, Photos and iMovie?
Define "pre 2020". Exactly what model is it?
What version of Office do you have installed?
I have found the order for my MacBook Air and discovered that I bought it in 2021. I assume that this means Sequoia is available to me after all
