Error message when adding iPad to Apple Configurator

I'm trying to add 2 10th Generation iPads to my company's Apple Configurator account. Prior to using Apple Configurator to prepare the iPads, I go through the initial setup process until after I've connected each iPad to my Wi-Fi network and reach the Data & Privacy screen. It goes through the usual process, but when it tries to download the profile to the iPads, it gives the following error:

Configurator could not download and apply the cloud configuration on "iPad" because the configuration is available. Try again later.

The iPads are added to Apple Business Manager, and can be assigned to our MDM server (we use SimpleMDM). When I then go through the setup process again, it gets to the point where the device would be enrolled, but the enrollment times out.

I've gone through this process with both iPads several times, and each time I've had the same issue. I've set up over 30 9th Generation iPads this way, but these are the first 10th Generation iPads I've purchased for the business.

In the end, I managed to enrol the iPads using the Apple Configurator app on my iPhone. It looks like my earlier issue was happening because my Mac is an old one running MacOS 12.7.6 and Configurator won't update beyond version 2.16.
