How can I remove/disable suggested contacts from share menu on iPhone while sharing anything only suggestion of message contact appear. How would I customize those suggestions as per my wish.

No, otherwise it wouldn't be a suggestion. You can let Apple know of your feedback below, but then it would more be presets such as pinned conversations in Messages and not suggestions.
You can't customize the Siri Suggested Contacts to share to. It automatically populates based on factors such as location, date and time, how often you are communicating with them and what you are sharing.
