I don't recall how to add all songs to a Playlist in one go on the iPod Classic itself. It may not be possible and even if it is, if there are a lot of songs it may take a while to complete. In extreme circumstances, it may lock up the iPod.
However, you can do it in your iTunes Library (that is being used to manage the iPod) and then Sync that playlist to the iPod:
In the Songs view, select the first song, scroll down the the last song, hold down the SHIFT key while selecting the last song. Every song in between will be selected. Ensuring that you keep all the songs selected (highlighted in blue), on iTunes's top bar menu select File/New/Playlist from Selection (or the Windows shortcut of CTRL+SHIFT+N). That's it, apart from naming the Playlist to one of your choice.
