I have an iMac 24-inch M1,2021 and cannot find on the computer or in the web a way to encrypt individual files, other than the control click method, which does not give me the option to encrypt.

Are you good at using the Terminal command line tool ?
Use the command:
zip -e protected.zip filename
Enter and confirm your password when prompted.
Just remember the password.
Otherwise the file will be un-openable

There isn't a way to encrypt individual files.
You can create an encrypted disk image where you store the files you want to encrypt.
