I was trying to unsync my notes from my iCloud because I have reasons to believe others with access to my iCloud (how idk) were reading my notes but when I’m doing so all my notes deleted even off of my device. I only wanted to unsync my iCloud from it not delete my notes is there a way that apple can help me in retrieving my notes?
Yes I did get the notification and tbh I read it as if it would delete them from my iCloud not the device. I just want to know if there is a way Apple through Data footprints could recover these for me. I see it was my mistake on the misreading. But is there a way?

You have asked us to guess exactly how you accomplished this.
If you did so by simply turning off iCloud syncing with this device, you were given a warning as follows:
If you simply turned off iCloud syncing with your device, then the notes should still be in iCloud. Search for them there on some device where you access iCloud Notes.
I checked, they are not on iCloud.
