The last upgrade to iTunes reduced it's functionality to only podcasts. Apparently, Apple TV, Apple Music and Apple Devices are replacing iTunes. Please provide a comprehensive guide to what I need to do to add music and videos to my Library and how to get those files to my Apple Device (iPhone, iPad Pro).

If you are familiar with iTunes then I would recommend removing the new Apple Music/Devices/TV apps so that iTunes is restored to full functionality. The newer apps are missing many features and not what could be called an upgrade. It is installing one of these apps, rather than an actual upgrade to iTunes, that triggers the warning message and limitations that you've seen.
