How did two new vendors have my address and payment information?

Were these purchases through the Apple App Store or web sites? Some browsers may autofill your customer data as a "timesaver."

Beyond that, as we are other end users and not Apple, we can only guess. We have no access to your accounts nor those of the companies involved.
