I've been using the "open camera" button on my phone since December but today, when I tried using it, Siri opened instead. How can I get this back to the way it was?

by default, double tap it to open camera
I believe you are referring to the new Camera Control button on your iPhone. You must click it once to open the Camera, then click once more to capture a shot. You may be holding the Camera Control button, which would activate Visual Intelligence which is powered by Siri.
