Recover notes from Time Machine

What is different in my case is that I have MACOS 12.7.6 on a Mac mini and can’t get a later version to run. (It is possible that I have a later version of notes because help articles here state that I can export all the folders to one pdf and I cannot).

Anyway, I was able to get back all my notes from Time Machine but they are under a folder called iCloud. I know they are not in the real iCloud because they were not before the TM restore. I am keeping my MAC off the internet for fear of losing them again.

The best step from here is, I think, to create a pdf of all of them and import them to the On my Mac folder. Can I do that?
