How do I connect an old iPad to iTunes?

I am trying to set up my dad's old iPad (A1670) for my aunt to use to play some games and watch videos in the nursing home. I have erased the previous content and am trying to set it up for her, but it needs to connect to iTunes to update. I have tried connecting it to my MacBook Air, and it will see the device, but I can't do anything with it. So now the iPad is stuck at the update screen and I don't know how to by pass it.
