whenever I try to record any audio, whether its guitar or vocals logic will do this weird thing where it'll pick up the audio just fine but then it'll cut out and randomly come back. I need help. I've tried restarting, uninstalling, and updating nothing is working.

Set you Mac's Mic Mode to Standard. You can find the setting either in the Control Center or in the top bar menu when a Logic window is active (orange mic icon).
