I'm transitioning from Microsoft Office to iWork. iWork supports cutting, copying, and pasting text, but only grudgingly as best I can tell. Is there any way to install icons for those action in an iWork toolbar?

No, there are no toolbar objects for copy, paste, or cut. Pages is not a Microsoft Word clone, and those clipboard-associated behaviors are integrated into the application's edit menu, or upon selection of text, from a right-click secondary menu.
