Apple's iCloud is intended as a convenience service, not a backup solution. That is what a Time Machine backup to a local drive does for you. Back up your Mac with Time Machine - Apple Support. If you do have a Time Machine backup from the timeframe of the missing documents, you might consider that as a recovery solution using Time Machine from your Applications folder.
Provided you have configured the selected Spotlight Search Results category Documents, and the local drive has been indexed, you may be able to locate your missing (but not deleted) Pages documents with the following Spotlight query. It asks for Pages documents that were modified between the two timeframes:
kind:pages modified:12/01/2024-02/01/2025
Pages will continue to save documents in the last chosen folder location until you change it in a subsequent save. Sometimes, this has the effect of hiding documents from users who do not understand that Pages save behavior.
