How can I delete messages from my watch and not my iphone
Before the last update I could delete messages from my watch and they would stay on my phone. Now they are deleted from my phone too. When will this be fixed?

The recent update changed the way the watch/phone SMS and imessages interact, possible since the introduction of RCS.
Leaving messages as orphans on watch or phone was considered a bug or inconvenience by many. This I believe is the fix.
