I have searched up how to add it and they just say head to control centre but when I go to mine I’m not able to customize my control centre which means I can’t activate screen recording

Why can't you customize Control Center? Have you checked Settings>Control Center. You should be able to find Screen Recording. You should also be able to customize control center from the actual Control Center itself. Open Control Center, tap on the + in the upper left corner, it should go into Edit mode and then go to the bottom and click on Add a Control.
