What are the codes for invisible characters in Numbers or Pages?
I see \n for a paragraph return, but what about the other invisible characters? Is there a list? How about a tab character or a non-breaking space, etc.?

See Find and Replace Formatting Symbols in View formatting symbols on Mac - Apple Support where these are officially documented by Apple.
You can also open the character viewer while in the Find or Replace fields of Pages Find/Replace tool and by double-clicking a character you have found on that character viewer panel, it will be inserted into the respective field. If you search for 00A0, and click on the first blank area of the center panel, it will tell you it is a No-Break Space.

Hard returns use \n
For tabs use \t
For soft returns use \i
\p for page breaks
